My Mexican Food Dinner At The Metzner’s

Homemade Tapioca Pudding with a touch of cinnamon.

I decided to make Mexican food. I saw this Crock Pot Chicken Enchilada recipe on the Internet. I added some chopped onions and  a small can of diced chilies for more flavor.

This is what it looked like before I served it. I chopped some green onions and added a dollop of sour cream to each serving.

I heated some refried beans and made some Spanish rice for a full meal. I will make this again as it was a hit with my family! I’m always glad to find a new delicious recipe to try. Just to mix it up a bit for weeknight meals. This is a keeper, Yum!

Tomorrow I’m making Beef Barley Soup… with a nice crusty bread. A cold front is supposed to be coming in so this may be a good day to make soup?

Guess I am at a point in life that I would like to be compensated . My whole life I have given freely. I recently had a the wonderful opportunity to submit my music to Warner Bros Records for consideration to the label! They liked my music but requested that I get in the game by acquiring 20k followers. Appearantly, that what it takes to get signed to a major label! Sure WB, I'm working on it! You have to have a huge following to land a recording contract. Gone are the days where a label can and will make you...
